Soup, There It Is!

Ever had a long day, it’s already 6:30pm, you’re starving, everyone in your house is starving and you have not done anything to prepare for dinner? You go to your cupboard and freezer looking for ideas on what you can whip up. Hopefully you have some good stand-by basics to work with for a quick, healthy, flavorful dish, and you won’t have to fall into the “just-order-a-pizza” pit once again!

I have found myself in this very position many times, and just last week in fact! Fortunately, I keep certain ingredients as staples in my kitchen, and if you have them too, then you will be on your way to having dinner in 30 minutes, enjoying this simple delight known as White Chili Soup!  And this soup really knows no season. It’s good any time of year— warms you up on a cold winter’s night, but keeps you light on a busy summer day.

For ingredients, all you really need is ground turkey, salsa, canned beans, corn, bouillon, and cheese. On a perfect day, you may also have sour cream, avocado, and tortilla chips, but that’s just based on your personal taste. And if you don’t want the cheese, no biggie…  this soup is still flavorful without. In fact, the best thing about this soup, other than how tasty and easy it is, is that you can substitute to your heart’s content and throw in your own culinary creativity! I’ve made some substitution suggestions below, and the amounts/ratios can also be adjusted as you see fit. This recipe makes 4 large servings for 4 hungry people.

WHITE CHILI SOUP

INGREDIENTS:

2 lbs. ground turkey (ground chicken, leftover chicken, or even sausage works great in place of/or in addition to ground turkey)

3 C. salsa (canned Rotel tomatoes also work great)

2 x 14oz. cans great northern beans, drained and rinsed

2 C. frozen corn

3 C. water

3 chicken bouillon cubes (I love the Knorr cubes which = 2 regular cubes so I adjust accordingly)

2 C. shredded cheddar cheese (I like to buy block cheese and shred my own for better freshness, and you can also use pepper jack or any other preferred cheese)

OPTIONAL CONDIMENTS:  Chopped avocado, sour cream, tortilla chips on the side

DIRECTIONS:  

Brown ground turkey in stock pot to crumbled texture; drain off any fat/liquid.  Stir in the salsa, beans, corn, water, and bouillon, and bring to a boil. Simmer for 10 minutes. Just before serving, add cheese and stir. (Alternatively, cheese can be added as a condiment on top.) Serve with additional condiments and chips as desired!

This recipe is pretty foolproof, and there’s a lot of flexibility with the amounts used and the ingredients themselves. Your household will be happy, satisfied and impressed! This is a genuine crowd pleaser, and you will be so happy you did not order that pizza!
